After several exciting months of planning, designing, building, creating, and prepping, Grand Wailea is proud to announce the grand reopening of Humuhumunukunukuāpua‘a, our signature restaurant. For both long-time fans as well as eager gourmands waiting to taste its award-winning cuisine for the first time, this grand reopening is a true culinary event, marking a new chapter for this Maui dining destination as well as an important milestone in Grand Wailea’s property-wide revitalization.

Humuhumunukunukuāpua‘a —still located amid its stunning lagoon-side setting—has been transformed to embody a seafood market atmosphere defined by freshness, creativity, and taste. This approach is brought to vivid life by the dramatic circular bar area at the heart of the restaurant’s familiar indoor-outdoor thatch-roofed dining area. The eye-catching bar top is actually made of glass, transforming it into an aquarium and creating the stunning visual effect of live fish swimming directly beneath the bar. In addition, a nearby glass case displays live fish for the daily catch and the featured menu items.

This ambience is accentuated by stunning ocean views, creating a setting that puts Maui’s extraordinary landscape front and center. This visual feast is augmented by the new gastronomic approach to the menu, which focuses on fresh, sustainably sourced seafood, including locally farmed fish from Blue Ocean Mariculture, a Big Island-based enterprise that specializes in producing responsibly grown seafood in the open ocean.

Humuhumunukunukuāpua‘a’s innovative new menu offers varied and diverse choices for a diverse range of palates, from comfort food such as Hawaiian bouillabaisse to more refined dishes such as oysters on the half shell served by an oyster sommelier, as well as exquisite Petrossian caviar presented in custom-designed tins. In addition, the restaurant offers only-in-Maui dining experiences, such as prawns served tableside on a hot lava rock.

Our master sommelier has curated a selection of wines, focusing on varietals from coastal regions with maritime influences—the perfect pairing for the inventive seafood dishes that form the core of the reimagined menu. In addition, the drink menu offers a range of classic tiki-style craft cocktails that weave Polynesian and Caribbean influences with American cocktail culture, adding a unique island twist to every meal.

As Grand Wailea’s multifaceted property-wide renovation nears its end, it’s appropriate that Humuhumunukunukuāpua‘a’s grand reopening coincides with the culmination of this total resort rejuvenation. Over the years, our signature restaurant has played a central role in shaping the overall Grand Wailea experience, connecting guests to our island home through extraordinary sensory journeys and immersive culinary encounters.
